No-Bake Superfood Breakfast Cookies

Ingredients

  • 2 medium Banana

  • 1 tsp Maple syrup

  • 1 tbsp Coconut sugar

  • 1 tbsp Almond "our/meal, Bob's Red Mill (or "our of choice)

  • 2 tbsp Cocoa powder, unsweetened

  • 1 tbsp Chia seeds, ground

  • 1 tbsp hulled Hemp seeds, shelled

  • 1 tbsp Cacao nibs, raw, Sunfoods

  • 1 tbsp Dried goji berries

  • 2 tbsp Dark chocolate chips, vegan

  • 1 tbsp Coconut oil

Instructions

  1. Mash bananas in a bowl with a fork; add maple syrup and set aside.

  2. In a separate bowl, combine oats, cacao, nibs, chia seeds, hemp seeds, and goji berries.

  3. Stir dry ingredients in with the banana mixture until everything is combined.

  4. Spoon out mixture onto a baking sheet and then use a spoon or spatula to "atten them out a bit more like cookies.

  5. Place in freezer for 15 minutes or until cookies hold shape.

  6. Serve immediately or store in freezer and allow a few minutes to thaw before serving*
